Coleslaw is simple and can round out a favorite casual meal—burgers, baked chicken, meat loaf, you name it.
I found this recipe for Hard Rock Cafe coleslaw in a Top Secret Recipes cookbook. Hard Rock Cafe has great burgers and fries, so it stands to reason their slaw would be worth copying. I’ve made this one often over several years and it’s great every time.
You can use any mayonnaise, but I like Follow Your Heart grapeseed oil Vegenaise.
Make the slaw the night before or at least a few hours ahead so the flavors can blend.

Ingredients
- 2/3 cup mayonnaise
- 1 tablespoon coconut sugar
- 1 tablespoon white vinegar
- 1 tablespoon heavy cream or coconut cream
- dash salt
- 4 cups shredded cabbage plus 1/2 cup shredded carrot OR 1 bag coleslaw mix (about 16 ounces)
Instructions
- In medium mixing bowl, combine mayonnaise, coconut sugar, vinegar, cream or coconut cream, and salt. Mix well with fork or whisk. Add cabbage and carrot or coleslaw mix. Toss well.
- Cover and refrigerate at least 6 hours and up to 24 hours to allow the flavors to develop.
