Easiest baked custard

Sometimes when I don’t feel well (illness almost never kills my appetite) I want something warm, creamy, and gentle on my system. Comfort food.

This very easy paleo custard can be mixed up just a few minutes, and then you can go back to bed and rest while it bakes. Or just make it as an anytime dessert–you can be well and enjoy it even more.

Lining the pan with a towel helps insulate the custard from direct heat and prevents it from separating.

Ingredients
  • 2 eggs
  • 2 tablespoons coconut sugar
  • Pinch of salt
  • 1 15-ounce can full-fat coconut milk
  • Ground or grated nutmeg (optional)
Instructions
  1. Preheat oven to 325 F. Prepare 9 x 13 baking pan: Line with thin towel. Place 6 4-ounce custard cups in pan.
  2. In a medium bowl, beat eggs. Add coconut sugar and salt, and stir until dissolved. Add coconut milk and stir to combine.
  3. Pour mixture into custard cups. Add water to baking pan to same level of custard in cups. Sprinkle a little nutmeg onto each custard.
  4. Bake 40 minutes, then insert a knife into the center of one of the custards. If knife is coated with liquid, bake another 10 minutes and test again. Repeat if necessary until knife is mostly clean. Serve warm or chilled.

    When I was younger, my sister and I would make custard all the time. This reminds me so much of that and how delicious it was!
