1/4 cup butter, cut into small pieces, or 1/4 cup softened coconut oil
1/4 cup bourbon
Instructions
Preheat oven to 350°F.
Place sweet potatoes on a foil-covered baking sheet. Bake until soft, 45 to 50 minutes. Let cool, peel, and cut into 1/2-inch slices.
Coat a 9 x 13 pan or casserole dish with oil and place sweet potato slices in a single layer. Sprinkle on coconut palm sugar and dot with butter or coconut oil. Pour on bourbon.
Bake 30 to 45 minutes. Let rest 15 minutes before serving.
