3 ounces prosciutto, chilled (it’s easier to handle when chilled)
Instructions
Preheat broiler.
Halve each slice of prosciutto the long way so you have two thin strips from each slice. The slices of meat are separated by sheets of waxy paper, so you’ll need to halve each piece separately.
Leaving the tip and end of the asparagus exposed, spiral-wrap each spear with one prosciutto strip, overlapping slightly as you wrap. The prosciutto is sticky, so even though it’s a little hard to handle, once you get it on the spear it stays in place nicely.
Place wrapped spears on a rimmed baking sheet. If desired, cover and refrigerate until ready to serve. Broil 5 to 7 minutes or until meat is crisp and spears are tender-crisp. Serve immediately.
