Serves: 5 cups
Ingredients
  • 2/3 cup coconut sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon allspice
  • 1 teaspoon salt
  • 2 egg whites
  • 4 teaspoons oil (light-tasting olive oil or walnut oil)
  • 1 pound nuts (about 5 cups; pecan and/or walnut halves, or your favorite mix)
Instructions
  1. Preheat oven to 300°F.
  2. Line baking sheet with parchment paper.
  3. In a medium bowl, mix coconut sugar, spices, and salt. Whisk in egg white and oil. Add nuts and toss until evenly coated. Spread nuts on baking sheet.
  4. Bake 20 to 25 minutes, stirring every 10 minutes. Let cool 5 minutes, then loosen and break up. Let cool completely on baking sheet. Store in airtight container up to 2 weeks.
